We had some leftover roast chicken from last night’s dinner and I didn’t want it to go to waste. Tomorrow is Anzac Day and we are planning a little picnic at the park. I thought, why not make an easy chicken sandwich to bring along? This recipe is so simple to put together and you probably already have all the ingredients in your pantry.
It is great for a quick lunch and perfect for sharing with your little ones. My son loves it, especially when I cut it into little triangles. Here’s how I make it.

What you need?
- 250 grams shredded cooked chicken
- 1 cup mayonnaise
- 1 small onion, finely chopped
- 2 tbsp pickle relish
- 1/4 cup chopped celery
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 cup shredded cheese
- Salt and pepper to taste
- White bread slices
- Lettuce leaves
How to make it
In a large bowl, mix together the mayonnaise, chopped onion, pickle relish, chopped celery, garlic powder, onion powder, salt, and pepper.

Give it a little taste and adjust the seasoning if you need to.

Once the flavor is just right, gently fold in the shredded chicken and cheese until everything is well coated.

Lay out your slices of white bread. Toasting the bread is optional, but it adds a nice texture.

Spread a thin layer of butter on each slice of bread.
Add a lettuce leaf to one slice, then spoon the chicken mixture on top.

Add extra cheese add another lettuce leaf if you want to.

Place another slice of bread over it to make a sandwich.

Cut into halves or triangles, especially if your kids enjoy smaller bites like mine does.

A little tip
If you have extra filling, keep it in an airtight container in the fridge. It will stay fresh for up to two days. Just stir it again before using.
For picnics or packed lunches, I like to wrap each sandwich in baking paper and pop them into a cooler bag with a small ice pack. It helps keep everything fresh and tasty until we are ready to eat.
